Spaghetti Bolognese
To feed a family of 4
2 sticks of celery
1 zucchini (courgette)
1 large carrot
Spinach (organic)
3 cloves of garlic
I red onion
Fresh and/or dry herbs – oregano, 2 bay leaves, tarragon, “mixed herbs”
Red/bell pepper (optional)
500 grams of minced beef (or 250g beef & 250g veal).
250ml passata
Beef or vegetable stock
A glug of red wine
Using your food processor, chop the carrot, celery and zucchini in the food processer. (I start with the carrot then add the others to achieve a similar size)
Fry the onion and garlic til onion is soft, brown the meat, add the chopped vegetables. Add the herbs. Add the liquids. Add a BIG handful of spinach – chopped if you are looking to hide it..
Bubble for at least 20 minutes – longer is better.
